Now that Thanksgiving is in the books and we have a few minutes we are pulling out some of those tomatoes we froze. Working on some delish smoked tomato sauce – too bad there isn’t smell-a-vision available!

Homemade tomato sauce tastes so much better than anything we’ve ever gotten from the store…and we have the opportunity to add in extra delicious and healthy vegetables for our family!
Smoked Tomato Sauce
Description
Delicious homemade tomato sauce.
Don't have a smoker? Don't worry you can still make this wonderful sauce without the smoke flavor. Substitute your oven where we use our smoker.

Preheat smoker to 300 degrees F.
Prep ingredients:
Quarter tomatoes & onions
Cut carrots into 1" slices
Mince garlic
Slice mushroomsAdd the tomatoes, onions, carrots, and garlic in a single layer to aluminum trays or foil covered baking sheets.
Drizzle olive oil over the vegetables and gently stir to coat everything. Sprinkle salt & pepper.If you are adding mushrooms, include them here.Smoke the vegetables for 2-3 hours. Everything should be tender and starting to brown on the edges, remove when done.

If you are not adding spinach/greens to your sauce continue to the next step.
Grab a large pot (large enough to fit the smoked vegetables), heat a little olive oil in the pot over medium heat. Add spinach/greens and cook until spinach starts to wilt.Grab a large pot (use same pot as optional step) and add smoked vegetables.
Add herbs, salt & pepper (to taste) and let mixture simmer, stirring occasionally, for 30 -6o minutes to completely combine flavors.Add vegetable mixture to a food processor (or use an immersion blender), pulse until desired consistency is reached.
Add broth here if your sauce is thicker than you like.Now that your sauce is complete you can...
a) enjoy now
b) cool completely and store in the fridge for a few days
c) freeze for 2-3 months
d) pressure can to be enjoyed later
